Cherry, Apricot, Grapes, Sparkling Acidity, JuicyCherries كَرَزَ, refers to the special process coffee beans undergo to bring out amazing flavor. It starts with selectively harvested cherries — only those with a brix level above 24 make the cut. These cherries are soaked in water for 4 hours, then undergo a roughly 45-hour Cherry Carbonic Maceration with mossto (crushed cherry pulp/juice) recirculation, followed by a second carbonic maceration lasting 38 hours. Coffees are finally dried on raised beds for 18 days, and then stored in GrainPro bags.
